Steven Rinella’s book The Scavenger’s Guide to Haute Cuisine related his yearlong attempt to re-create Escoffier’s original recipes with wild-gathered ingredients from snapping turtle to mountain goat. His book Meat Eater: Adventures from the Life of an American Hunter is also a successful television series and podcast. Is he the anti-Bittman? He’ll talk about the hunting lifestyle, wild game, the ethics of hunting, and the spiritual need for wilderness at 5:30 p.m. at the Wisconsin Institutes for Discovery Building, 330 N. Harvest’s private dining room will be the site of a special Flavors of Haiti dinner. It’s a fundraiser for Wisconsin Microfinance’s project to help those in Haiti who lost businesses or other sources of income due to the 2010 earthquake.
