Vintage Brewing Company has a lot going on: an illuminated aquarium in the middle of the bar, flat-screen TVs showing everything from sports to Forrest Gump, cheesy yet appealing '70s beer signs with photos of clear mountain streams and babes with Farrah hair, and various pieces of mid-century kitsch. Throw in a few pool tables, videogames, local artwork, giant brewing equipment and a fireplace, and you have a whole lot of theme. My experiences at Vintage were a similar mixed bag.

After just a couple of months making beer, Vintage Brewing Company on Madison's west side is attracting a lot of attention from local beer enthusiasts. The brewpub, which took over the space formerly occupied by JT Whitney's, opened in January. Vintage co-owner and brewmaster Scott Manning started serving his own brews in late February.

With a name like Vintage Brewing Company, you might expect Madison's west-side brewpub to pay attention to so-called classical beer styles. But the latest brew to come on tap there this week is more than a nostalgic combination of malt and hops. Brewmaster Scott Manning has unveiled a brew that has few contemporaries: It's called Sahti, and it's the traditional farmhouse ale of Finland.

Cask-conditioned beers served on a hand-pulled British beer engine are rare in Madison. However, the west-side Vintage Brewing Company tries to keep at least two on tap, with a new offering rotating in each week. Its latest is Cask-conditioned Laven(Derby Girl) ESB, also called Lavender ESB.

Vintage Brewing turned one year old this month, but brewmaster Scott Manning has already created a few traditions that help this west side brewpub live up to its name. Manning just released a beer that he says will become part of his annual ritual at the start of a new year. In December, he assesses what ingredients that remain from the previous brew year, and uses them to improvise a recipe he calls "Freestyle."

Vintage Brewing has recently released several new beers for this summer season. One of these has quickly become an early favorite, a crisp, refreshing and effervescent brew named Hibiscus Saison. It's a beer with a bright fruity aroma and an eye-catching cherry blossom-pink foamy head.

The fall apple harvest in Wisconsin usually brings with it the opportunity to try one or two new local beers. This year, Vintage Brewing has an apple beer worthy of attention. The Madison brewpub recently tapped its Sun D'Appled Orchard Ale, made from apples grown on its owner's family farm.

McLovin is the name of his Irish Red that just went on tap at the west-side brewpub. It's a beer that is sweet, satisfying and, alongside roses and chocolates, sure to please!

If the meaning of life can be found on a bumper sticker, I believe that the phrase "Real women don't drink light beer" pretty much sums it up. The women who gather monthly at Vintage Brewing Company in Madison for a women's-only beer-tasting club reinforce my belief. The FEMs, or Females Enjoying Microbrews, started meeting in January under the tutelage of Robyn Klinge, beer education manager at Vintage.

"This is one for the sour-heads, the barstool historians, and the 'taste-it-all' craft beer hipsters," says Vintage brewmaster Scott Manning, who teamed up with Mark Duchow of Sweet Mullets to make a gruit ("groot"), a beer style that predates the modern use of hops in beer. Manning and Duchow are among Wisconsin's most creative brewers, and they occasionally depart from the mainstream to produce what many see as fringe beer offerings.

Brewmaster Scott Manning, who likes to have fun with his beer names, calls it "Bee's Knees." Vintage brewmaster Scott Manning has been making Woodshed since he opened the west-side brewpub in 2010. It's an India Pale Ale with elements of the traditional English approach but brewed with assertive U.S. hops. A touch of oak gives the beer depth, and separates it from the pack of merely bitter IPAs. Now Woodshed is lending its name to Vintage's new satellite tavern in Sauk City.

"There seems to be an arms race for strength and extreme flavor in beer, so much so that the Russian Imperial Stout doesn't seem so extreme anymore," says brewmaster Scott Manning of Vintage Brewing. The style is the boldest in the stout family of beers, seasonally associated with cool conditions, and ages really well. The release of Maximilian Stout, or Max Stout for short, is perfectly timed, as craft beer drinkers look forward to full-flavored and strong beers to cope with the deepest and coldest stretch of winter.

It's clear from the demeanor of the crowd that this is serious business.

Vintage Brewing just made its 500th batch of beer on July 1. "We're just over four years old, and I think it's great that we're humming along with over 100 batches a year," says Scott Manning, brewmaster and co-owner of Vintage. Since opening in 2010, Manning estimates that he has made at least 60 different styles of beer.
