Enzyme Nutrition: The Food Enzyme Concept, by Edward Howell Howell is the granddaddy of the food enzyme concept, which suggested that good health depends upon having a plentiful supply of digestive enzymes, because without them the body uses up its metabolic enzymes which are needed for growth and repair. Howell began to research ways to replace the enzymes lost in cooking and food processing and was able to cultivate and extract certain plant enzymes that could be used by his patients.
