Santa Fe Trailer
Santa Fe Trailer, one of the Library Mall's most popular food carts, scoring 8th overall in the 2009 ranking session, is opening a delivery and carryout location in Middleton.
Santa Fe Catering will be using the kitchen at Xs Nightclub and Lounge (formerly Pachuco's) at 8152 Forsythia St. in Middleton as a home base. Items from the catering menu will be available for take-out and delivery at lunch and dinner weekdays (11 a.m.-2 p.m. and 4 p.m.-8 p.m. Mon.-Fri.).
Trailer fans will recognize many of their favorites on the menu -- burritos, tacos and Santa Fe's famous blue corn enchiladas. The cart's signature green chile stew is also available, along with a handful of other soups and stews, including posole -- shredded pork and hominy in a red chile-lime broth -- and the chicken tortilla soup.
Santa Fe will also be serving a bar menu at the X Nightclub. New to the bar menu: tequila lime pork tenderloin tacos, chipotle beef tenderloin sliders, a "Phoenix Philly" and a green chile cheeseburger.
Co-owner Lori Christianson explains that she and partner Andy Hartnett had been cooking out of the kitchen at the Branch Street Retreat, which had "limited hours" available to them and hence limited their ability to serve. This fall, the owner of Pachuco's approached them to "see if we would be interested in the huge kitchen" at the nightclub, the former Tallard's Station, across from the Middleton airport.
Pachuco's, known for its Latin dance nights, has now changed its name again -- to X -- and it will be offering "different nighclub promotions" says Christianson.
Christianson, who was also behind Tortillas restaurant (it took over the old Pasqual's space in the shopping center at University Avenue and Park Street in Middleton) has also brought back some of the menu items, like wraps, from that restaurant: "Being back in Middleton, we thought we'd put some old favorites on the menu."
